Too Sexy Organic Vegan Gluten Free Cookies

All ingredients are organic

2 cups brown rice flour

1 tsp baking soda

1 tsp xantham gum

1/4 teaspoon himalayan crystal salt

3/4 cup melted raw coconut oil

1 cup raw coconut palm sugar

1 tsp vanilla

1 tsp corstarch

2 tablespoon hemp milk

1/2 cup chocolate chips

1/3 cup almond meal

Personally, I make everything from scratch, including hemp milk and almond meal.

To make hemp milk: Place 1 cup hemp seeds in blender with 2.5 cups water, a pinch of salt, 1/2 tablespoon of agave and 1/2 tsp vanilla. Blend. Strain through nut milk bag, available at most health food stores.

To make almond meal: Place almonds in blender. Blend.

Save what you dont use in glass jars in the fridge.

To make cookies

Preheat oven to 350.

Line cookie sheets with parchment paper (or lightly grease cookie sheets)

In small bowl combine flour, xantham gum, salt, baking soda, almond meal.

In large bowl combine melted oil with sugar.

Mix together cornstarch and milk, add to sugar mixture with vanilla.

Add flour mixture to sugar mixture in 2 or 3 batches then add chocolate chips.

Use a tablespoon to drop cookies onto parchment paper, or make little balls with your hands.

If cookies seem too moist, add a little more flour.

Bake for about 10 minutes.

Let cool, if you can control yourself for about 10 minutes.

Dip cookies in fresh raw hemp milk. Eat. Repeat. Get sexy. 🙂
